Sweetgum Tree Logs are inoculated with Oyster Mushroom sawdust spawn. The Oyster mushrooms will fruit between 50-70 degrees F from mid-summer through mid-fall, 7-10 months after inoculation. Oyster Mushroom fruit have various shades of brown caps with white stems depending on light exposure and oyster mushroom strain. Logs are 3.5-5 inches in diameter and 10-12 inches in length.

Logs should be placed on the ground in a shaded area protected from the sun and wind where it will receive natural rainfall. To maintain moisture, water the logs every week if there has been no rainfall.
Watch your logs closely during the fruiting season as they fruit spontaneously and quickly. When mushrooms start fruiting, mist them with water once or twice daily to prevent them from drying out. Your mushrooms are typically ready for harvest after 2-3 days. It is best to harvest mushrooms while the caps are still curled down before spore release.
